This striking savoury octopus aspic, inspired by a 19th-century ceramic mould, celebrates the Victorian tradition of elaborate food presentations. Featuring a beautifully detailed asparagus bundle atop a shimmering clear jelly, it pays homage to the era’s love for savoury aspics—a staple at high-society gatherings. Encased within are vibrant green beans, sweetcorn, and rich octopus details, reflecting the visual and culinary artistry of the time.

Asparagus, often considered a luxury vegetable, was a popular motif in mould designs, symbolizing refinement and the height of sophistication in Victorian dining.
